What is the best bait for snapper in Australia?

SHANNON’S ANSWER

Short answer

My favourite all-round snapper baits are pilchards, squid cut into rings, and fresh fish presented as fillets or butterflied baits. Pilchards are a reliable starting point around Australia, while squid rings are another good all-round choice, particularly in southern waters.

When I’m chasing large snapper, I especially like fish heads. Yakka, Slimy Mackerel, Australian salmon, Pike and Couta heads can all be deadly baits. Those same fish also make excellent fillet or butterflied baits, giving you a few different options to try.

My top pick for big snapper in southern Queensland is a fresh yakka head. It generally means fewer bites and plenty of patience, but in my experience, when one gets taken, it’s usually a big red.

Why this happens

Pilchards are a good snapper bait, but they’re soft and can be picked apart quickly. If you’re getting repeated little taps and winding in a stripped bait, small fish may be tearing it away before a larger snapper has a chance to find it. That doesn’t necessarily mean pilchards are the wrong choice; it may mean you need a tougher bait for the conditions.

Squid is a useful alternative because its firm flesh holds onto the hook better and can withstand more attention from pickers. Fish heads also give you a firmer bait option than a soft pilchard. Experienced snapper anglers use both squid and fish heads for these reasons.

The key is to separate getting plenty of bites from targeting a larger fish. A fish head won’t guarantee a big snapper or stop every picker, but it’s a bait I’m happy to leave out when I’m prepared to wait for a better fish. Fewer bites aren’t necessarily a reason to change it straight away, provided the bait is still intact and presented properly.

What to change next trip

  • Try squid rings when pilchards are disappearing quickly. Take both baits so you can compare them during the session. Squid gives you a tougher option, and it’s one of my favourite all-round snapper baits in southern waters.
  • Put out a fresh fish head to target a bigger snapper. Yakka, slimy mackerel, Australian salmon, pike and couta are my picks. In southern Queensland, I’d start with a fresh yakka head and be prepared to wait. Butterflied baits from those same species are good alternatives.
  • Check your bait and hook presentation regularly. After repeated small bites, wind in and see what’s left rather than assuming there’s still enough bait on the hook. Replace stripped baits, keep the hook point clear, and make sure a tougher bait isn’t so bulky that it stops the hook from taking hold.
